I Have The Perfect Snack For You And Your Kiddies Today

The other day I was stuck for a healthy afternoon tea for myself and the kids. I had nothing in the fridge to work with and I had two hungry kiddies who were demanding a snack right away.I ended up making the most delicious chia bowl with caramelized banana on top and it was a hit!!I thought I share it with you encase you wanted to give it a go.

Chia Bowl with Caramelized Banana

Recipe// serves 3-4Ingredients:

  • ½ a cup of chia seeds
  • 1 ½ cups of plant-based milk
  • (I used soy milk for the extra boost of calcium)1 tsp of cinnamon
  • ½ a tsp of vanilla extract (optional but yummy)
  • 1 banana
  • 1 cup of frozen berries ( I used wild blueberries)
  • 1 tsp of coconut oil
  • ½ a tsp of coconut sugar
  1. In a large jar or bowl add your chia seeds, plant-based milk, ½ a tsp of cinnamon and vanilla extract, and mix until combined. Let It sit for 5-10 minutes to thicken while you make the banana.
  2. Slice your banana in half longways and then into quarters. It doesn’t really matter how you cut it just as long as you have chunks of banana that you can easily flip on the pan.
  3. Heat a nonstick frying pan with coconut oil, add your banana, the rest of the cinnamon, and the coconut sugar, and cook on low until it's lightly golden and the banana is soft.
  4. While the banana cooks heat your berries in a small saucepan until warm.
  5. To serve scoop the chia pudding into bowls, top with berries, and then slice your banana and add it onto each bowl. Serve with a drizzle of maple syrup if you want it extra sweet or with some hemp hearts for a boost of omegas and protein.

Tip:

I suggest doubling the chia pudding so you have enough for a few days and then this snack becomes even quicker and easier.Chia seeds are such a fantastic calcium-rich food to add to your and your little one's diet each day. This is my favourite way to get it into my family's diet. What about you?
