I am so excited to be finally sharing this recipe with you. You are going to love these!! They are my favourite cookie recipe to date and are perfect for increasing your milk supply while also getting in a bunch of healthy fats, energy-boosting carbohydrates, and omegas.I partnered with IE Produce to create this recipe so that you could easily stop by and pick up everything you needed in one place. My Epic Vegan Lactation Cookies
Makes 20 cookiesIngredients:
- 2 tbsp of ground flax
- 4 tbsp of water
- 1 cup of spelt flour
- ½ cup of almond meal
- 1 cup of old fashioned oats
- ½ cup of coconut sugar
- ¼ cup of brewers yeast
- 1 tsp of baking powder
- Pinch of salt
- ¾ cup of melted coconut oil
- ½ cup of dark choc chips
- ½ tsp of vanilla extract (I love using the paste)
Method:
- Heat your oven to 180 bake and line a baking tray with baking paper.
- Make your flax eggs by mixing 2 tbsp of ground flax with 4 tbsp of water. Set to one side for 5 minutes to thicken.
- In a large bowl add the flour, almond meal, oats, brewers yeast, baking powder, and salt. Mix well.
- Add your flax egg, melted coconut oil, and vanilla paste and mix. Add in the chocolate chips and mix.
- Roll into balls and place them onto your lined baking tray. Press down with a fork and bake for 20 minutes.
- Let them cool before storing them in the fridge for 2 weeks or the freezer for a few months. I personally like to keep some in the fridge for the week and store the rest in the freezer to keep them fresher.
