Veggie Packed Nachos
You have to make these veggie-packed nachos!They are such a favourite of ours and such a delicious way to get in veggies, some beans, and of course my favourite cashew cheese which I make every single week.The whole family will adore these (even the kiddies) and it’s such a fun recipe to throw together after a long day.Here’s the recipe.
Veggie Packed Nacho
Ingredients:
- 1 tbsp of olive oil
- ½ brown onion
- 1 zucchini, finely grated
- 1 x tin of baked beans
- 1 x tin of black beans, drained and rinsed
- 1 tin of tomatoes
- 1 tsp of paprika
- Salt and pepper
- Bag of corn chips
- A handful of vegan cheese
Cashew Cheese
- 1 cup of raw cashews
- 1/3 cup of water
- Juice ½ a lemon
- Pinch of salt
Toppings
- Lettuce
- Guacamole
- Tomato
- Coriander
Prep: Soak cashews in water for 3 hours then drain and rinse. Blend with the rest of the ingredients and then place to one side.
Method:
- In a large pot add the olive oil and onion and cook for 2 minutes on low. Add in the grated zucchini, baked beans, black beans, tin of tomatoes, and paprika. Cook on medium to low heat with the lid on for 10 minutes.
- While the beans cook turn the oven onto grill 300 and plate up your corn chips. Top with the cooked bean mixture and a sprinkle of cheese then place in a hot oven for 30-60 seconds or until crispy on top.
- Top with guacamole, tomato, lettuce, and cashew cheese.
