Luca's favourite Creamy Vegetable Soup

Do you struggle to get your kiddies to eat vegetables? If that’s a big YES then you have to try Luca's favourite creamy vegetable soup.It’s my savior when it comes to packing in a bunch of veggies into my little man’s diet and the best part is it’s so quick and easy to make and it’s delicious so we get to enjoy a bowl as well.The soup is packed with broccoli, sweet potato, onion, garlic, and carrots and all blended so it's creamy and smooth since let’s be honest what kid likes lumpy soup?I serve it with some sourdough slices with avocado and the kids devour it. I hope you give it a go and I hope it makes at least one of your mealtimes easier this week.

Luca's favourite creamy vegetable soup

serves 3-4Ingredients:

  • 1 tbsp of olive oil
  • 1 brown onion
  • 3 garlic cloves
  • 1 medium broccoli
  • 1 medium sweet potato, peeled
  • 2 medium carrots, peeled
  • 4 cups of vegetable stock
  • 3 tbsp of nutritional yeast
  • Juice of one lemon
  • Salt and pepper

Method:

  1. Heat a pot with olive oil. Add the onion and cook for 3-4 minutes until softened. Add in the crushed garlic closely followed by the broccoli, sweet potato, carrots, and vegetable stock.
  2. Bring to a boil then simmer with the lid on for 15 minutes.
  3. Add the juice of one lemon, salt and pepper, and nutritional yeast and blitz in your blender until smooth and creamy.
