Sweet Potato Brownies

With a fussy toddler at home my game plan in simple……Hide as many vegetables into his food as possible (hence the sweet potato brownies) so I know he’s at least getting in some goodness.Let me tell you Luca is challenging me lately with his picky eating. I’m not going to lie, it’s a huge pain in the butt especially since Georgia is such a foodie and eats basically everything.Enter my sweet potato brownies.My genius way to get sweet potatoes into Luca's diet as well as filling him up with lots of healthy fats, protein, antioxidants, magnesium, iron, and calcium that come from all the other ingredients I’ve jam-packed into these brownies.I’m obsessed with them, Luca demolishes them, and Georgia…well, Georgia loves anything with chocolate so it's hell yes from her.Here’s the recipe for my Sweet Potato Brownies.Sweet Potato Brownies

Sweet Potato Brownies

Prep 10 minutesReady in 30 minutesMakes 12 browniesIngredients:

  • 1 cup of cooked sweet potato
  • ¼ cacao powder
  • ½ cup of nut butter
  • ¼ cup of maple syrup
  • 1 tsp of vanilla extract
  • 100 grams of 82% dark chocolate (+ extra for garnish)

Method:

  1. Turn oven to 180 bake and line a square baking dish with baking paper.
  2. To your food processor or blender add the cooked sweet potato, cacao powder, nut butter, maple syrup, and vanilla extract. Blend until smooth.
  3. Chop the chocolate and then mix it into brownie batter.
  4. Pour mixture into baking dish and smooth out. Top with extra chopped chocolate and a pinch of salt. Bake for 30 minutes and then let it cool before slicing and enjoying.
