Super Green Cheesy Pasta

Do you struggle to get your kids to eat greens or any vegetables for that matter? If that’s a yes then you have to try my Super Green Cheesy Pasta. It’s become one of my ways of getting greens and vegetables into Luca’s diet (Georgia would eat veggies all day long like her mama).The cheesy flavour comes from the cashews and nutritional yeast which you turn into a delicious creamy sauce along with the cooked broccoli, peas and big handful of spinach.Here’s how to make it.

Super Green Cheesy Pasta

Serves 3-4

  • ½ a cup of raw cashews (soaked for 3 hours)
  • 2 tbsp of nutritional yeast
  • Pinch of salt
  • Juice ½ a lemon
  • 1 cup of water
  • 1 cup of broccoli
  • 1/3 cup of frozen peas
  • Handful of baby spinach
  • 250 grams of quinoa rice fusilli pasta
  1. Soak the cashews in water for at 3 hours if you haven’t already and then drain before using them.
  2. Boil two pots of water. In one pot add the pasta and cook for 15 minutes and in the other add the broccoli and cook for 6 minutes.
  3. When the broccoli has been cooking for 3 minutes add the frozen peas and cook for a further 3 minutes.
  4. Drain the peas and broccoli and add them to your blender along with the spinach, cashews, nutritional yeast, lemon juice, salt and water. Blend on high for 60 seconds or until smooth and creamy.
  5. Drain the pasta once cooked and then combine it with the sauce, top with extra nutritional yeast and enjoy.
