Herby Orzo Pasta Salad 

Now that the weather is warming I’m finding myself craving more fresh, vibrant salads with lots of raw veggies, herbs, and a simple dressing and this Herby Orzo Pasta Salad has been my go-to lately. It takes 10 minutes to make and is a great base for the week that you can add herby tofu, falafels, or some homemade hummus with roast vegetables if you want to mix it up.The combination of vibrant veggies, lots of herbs, crunchy seeds, and sweet raisins makes this salad so delicious and nourishing.Here’s how to make it.

HERBY ORZO PASTA SALAD 

Serves 4Ingredients:

  • 1 cup of orzo pasta
  • 1 cup of herbs ( parsley, mint, coriander, or basil)
  • 1 radish
  • A big handful of microgreens
  • 1/3 cucumber
  • ¼ red onion
  • Handful cherry tomatoes
  • 1/3 cup of sun-dried tomatoes
  • A small handful of raisins
  • A small handful of pumpkin seeds
  • Juice of 1 lemon
  • 6 tbsp of olive oil
  • Salt and pepper

Method:

  1. Boil water and add orzo. Cook for 8 minutes then drain and place in a large bowl.
  2. Finely chop the herbs and vegetables and add everything to your large mixing bowl along with the olive oil, salt and pepper, lemon juice, pumpkin seeds, and raisins.
  3. Mix well and then serve with hummus, sauerkraut, and avocado, or store in the fridge for easy lunches for the week.
