Easy Kids Weeknight Pizza with Beans  

I have made this recipe so many times in the last month that I just knew I needed to get it up on the blog ASAP.

I know how hard it is to come up with new recipe ideas for your kids each week. Especially ones that they love, that are nutrient-rich, and that contain some kind of bean or legume. 

That’s why I’m so excited to share these healthy weeknight pizzas with beans. 

My kids are devouring them and they have become a new weekly staple in our house that I can customize depending on what beans or legumes I have in the pantry. 

They are iron-rich, vegan, full of B vitamins, and best of all they only take 15 minutes. Don’t you just love that for us!

Here’s how you make them.

 
Easy Kids Weeknight Pizza with Beans  

Makes 4 

Ingredients:

  • 2 English muffins or pita bread (sliced in half)
  • ½ a jar of tomato paste 
  • ½ a tin of chickpeas, cannellini beans, black beans, or lentils. 
  • Nutritional yeast 

Optional veggies:

  • Spinach
  • Chopped capsicum
  • Tomato
  • Mushrooms 

Method:

  1. Turn oven onto 180 bake and line a baking tray with baking paper
  2. Slice your pita bread or English muffins in half.
  3. In a mini food processor or blender add the tomato paste and drained and rinsed beans or legumes. Blitz on high until blended and smooth. 
  4. Spread the tomato bean mixture on top of the bread. Top with any vegetables you plan to use (or none) and finish with a small sprinkle of nutritional yeast.
  5. Bake in the oven for 15 minutes. 

Serve with some maple tofu bites (from my book), cucumber and capsicum slices, and some sauerkraut or fresh fruit. 

The perfect easy and nourishing weeknight dinner for your little ones.
