Peanut Butter Banana Porridge with Crushed Strawberries

I’ve been mixing up our morning porridge bowls  this week with this Peanut Butter Banana Porridge with crushed strawberries and let me tell you it is delicious.It’s iron-rich, full of goodness and so easy to make during the week day when you’re rushed and trying to get everyone out the door.Let me know if you give it a go.Peanut Butter Banana Porridge with Crushed Strawberries Serves 4 (2 adults + 2 kids)

  • 1 ½ cups of old-fashioned oats (i use Chantal Organics ones for all my porridge recipes and am obsessed with the taste and texture of them.
  • 1 ½ cups of calcium-fortified soy milk
  • 1 ½ cups of water
  • 2 tbsp of chia seeds
  • 2 tbsp of hemp seeds
  • 1 ripe banana mashed
  • 1 tbsp of smooth peanut butter
  • ½ tsp of cinnamon
  • 2 cups of frozen strawberries
  • ½ tsp of vanilla essence (optional)
  1. Add the oats, soy milk, water, chia, hemp, banana, peanut butter, and cinnamon. Mix well and cook for 10 minutes on a low simmer until cooked.
  2. While the oats cook add the frozen strawberries to a pot and heat on low with a lid until soft. Crush with a fork, add the vanilla, and mix.
  3. Scoop porridge into bowls, add the crushed strawberries, more banana, maple, and soy milk, and enjoy.
