My 2 Minute Chocolate Brownie Mugs

Trust me you need to make these chocolate brownie mugs right away!!They’re rich, decadent, vegan, ready in under 2 minutes and so unbelievably delicious.I love this as a quick dessert when that after-dinner chocolate craving hits and It's the perfect individual little desert cup that I can’t wait for you to try.Here’s the recipe…

Chocolate Brownie Mugs

Serves 1

  • 2 tbsp of flour (I used wholemeal spelt flour)
  • 1 tbsp of almond meal
  • 2 tbsp of cacao powder
  • 2 tbsp of coconut sugar
  • ¼ tsp baking powder
  • Pinch of salt
  • 1 tbsp of melted coconut oil
  • 3 tbsp of plant-based milk ( I used Littleisland oat milk)
  • 1 tbsp of dark chocolate chips

Method:

  1. Place flour, almond meal, cacao powder, coconut sugar, baking powder and, salt into a medium-sized mug and mix well.
  2. Pour in the melted coconut oil and plant-based milk and mix.
  3. Sprinkle in a few dark chocolate chips and give it one final mix before topping it with the rest of the chocolate chips and a small pinch of salt.
  4. Place in the microwave for 45 seconds. If you want it to be slightly more cooked I would do it for another 10-15 seconds but no longer. You want it to still be creamy in the middle.
  5. Top with some more plant-based milk or Oatly creamer if you have some. This will take it to the next level.
