Vegan Rocky Road 

Christmas is only a few days away and that means it’s time to make my epic vegan rocky road. I make this every single year without fail and it’s such a fun and delicious recipe to make that I always pack when we head away to our bach.I decided to get Georgia to join in this year which was definitely brave as a lot of marshmallows and lollies disappeared in the making of this rocky road, but she loved it.I hope you give it a go. It’s rich, chocolatey, crunchy, and chewy and the jar is always finished way too soon.I suggest doubling the recipe and keeping some in the back of the fridge so you can have your own little secret stash when everyone else eats the rest (hehe).Enjoy and have a very Merry Christmas. My Vegan Rocky Road 

Makes 20 bars Note: These are my favourite additions to the rocky road but feel free to add in any dried fruit, nuts, seeds, and lollies that you love. Freeze-dried raspberries are also delicious in this and work well sprinkled on top.Ingredients: 

  • 300 grams of Dark Chocolate (I love the fair trade dark chocolate)
  • 1 cup of vegan marshmallows
  • 1 cup of vegan gummies
  • 1 cup of coconut strips
  • 1 cup of raw almonds roughly chopped
  • 1 cup of dried cranberries or any dried fruit

Method

  1. Melt chocolate over a double boiler until smooth and creamy.
  2. Stir in chopped marshmallows, almonds, gummies, dried cranberries, and coconut strips.
  3. Pour into a lined baking tray and spread out evenly.
  4. Place in the fridge for two hours to set before slicing into strips and then cubes and storing in the fridge for up to a month.
