"Loving Earth" Chocolate Covered Bananas

I think part of the fun of being a ‘health foodie’ comes with whipping up exciting new desserts like these bananas covered with “Loving Earths” delicious chocolate and showing people that healthy doesn’t need to be boring or restricted.

As a Holistic Nutritionist my approach to food is very simple. I’m about filling the body with as much goodness as possible, and letting that naturally create less room for the bad. I’m not about restrictions or counting calories. I would literally have no clue where to start if someone asked me to count my calorie intake for the day (and I’m proud of that).

A WHOLE-FOOD, PLANT-BASED DIET:

I pride myself on eating a whole-food plant-based diet and also on encouraging and inspiring my clients  to do the same. There is so much conflicting information out there regarding what to eat and what not to eat, that I don’t blame you if you get confused and frustrated at times. But it doesn’t have to be that way.

Once you understand that it’s about moderation, eating whole-foods (that means none of that processed rubbish we can sometimes convince ourselves is good food) and also filling our diets with greens and plants that you realise its actually quiet simple.

But even though my diet is jam packed with veggies and so much goodness, I still crave little treat just like everyone else. Something slightly naughty, that will taste amazing and give me a lift. I want all of those things when it comes to my treats, but I also want it to offer me something else as well, and that something else is nutrient value.

I understand from a nutritional point of view that we are what we eat. So even though I want to eat a treat and reward myself after a hard day or week, I also want to reward myself with something that wont make me feel awful at the end of the mouthful.

NO MORE GUILT:

I HATE feeling guilty after eating. I think that ruins it and takes away from the pleasure that you should get when eating. So In order to feel satisfied, but still healthy after a treat I find myself searching for things like almond milk hot chocolates, real fruit crumbles and more recently chocolate covered bananas with buckwheat.

I get real satisfaction creating food that not only makes me feel incredible and taste amazing but also give my diet what it needs. That’s because it is a balanced meal and at the end of the day a balanced diet.

So next time your searching for a little sweet treat, but you don’t want to let all that hard work go to waste, whip up some of these Loving Earth chocolate treats and let your taste buds ignite and your health radiate.

"LOVING EARTH" CHOCOLATE COVERED BANANA’S

Makes// 4 Banana sticks 

Ingredients 
  • 1 x Loving Earth Dark Chocolate
  • 2 x bananas
  • Popsicle or lollipop Sticks
  • Toppings: Coconut, crushed walnuts, cacao nibs, freeze dried pineapple and buckwheat
Method
  1. Halve the bananas and place them in the freezer for 30 minutes to harden, meanwhile melt the chocolate in a double boiler.
  2. After 30 minutes place the bananas on a stick, quickly dip the bananas into the chocolate (you might need a spoon to help you to cover the banana’s).
  3. Place the chocolate covered bananas on a plate lined with baking paper and then sprinkle them with the topping of choice.
  4. Place in the fridge for 2-3 hours to set before eating.
