Falafel Salad Bowls

Can you believe that!I’m going to let you in on a little secret, I kind of cheat with this recipe. I mean I don’t even know if I could call it much of a recipe since I buy the falafel mix pre-made (you will not find me blending chickpeas into falafels at 7.30 pm on a weeknight that’s for sure) and I also buy the hummus.Trust me, the falafel mix I buy is so goof (buy it here) and the ingredients are great that there is no need to make them yourself. And Lisa’s hummus is also delicious and it saves you like 100 dishes so let’s just call it a win and get to the recipe.
Falafel Salad Bowls
Serves 2Ingredients:
- 1 pack of Turkish Kitchen Basil Falafel with Lime Mix
- ½ a bag of mesclun and herb lettuce
- ½ a red capsicum
- 2 medium tomatoes
- A few slices of red onion
- 1 avocado
- Lisa’s Hummus
- Handful of pumpkin seeds
Tzatziki Recipe:
- ¼ cucumber, finely diced
- 1/3 cup of plain coconut yogurt
- Big handful of mint, finely chopped
- Juice ½ a lemon
Method:
- Heat a large frying pan with olive oil, then scoop the falafel mix into balls with a spoon and flatten with your hand. Cook for 2-3 minutes on each side.
- While the falafels cook make the tzatziki. Add all the ingredients into a bowl and mix well.
- Start platting your salad bowls with lettuce, chopped tomato, avocado, red onion, and capsicum.
- Top with 4-5 falafels, a dollop of tzatziki and hummus, a drizzle of olive oil, some lemon juice and, finish with a few pumpkin seeds and chili flakes if you like.
